Well, there are 2 entries that deal with drop probability.... Probability and Drop Chance.
Look at Emperor Crush for example... he has two Lootdrop entries:
926_Emperor_Crush_Wear
926_Emperor_Crush_Misc
926_Emperor_Crush_Wear is given a 100% probability which means that something from this group will always drop. (However that group only has 1 item: Dwarven Ringmail Tunic... so the tunic will always drop)
926_Emperor_Crush_Misc is given a 35% probability so something from this group will only drop 35% of the time.
In 926_Emperor_Crush_Misc are 2 items:
Orc Ribcage
Rune of Nagafen
Each one has a 50% chance of dropping when something from that group drops. (ie. 35% of the time an Orc Ribcage has a 50% chance of dropping)
Lastly, attached to each Lootgroup is a multiplier which indicates how many items from that group to check. So, if the multiplier for 926_Emperor_Crush_Misc were 3 (it's actually 1) there would be the possibility of up to 3 items from that group (at 35% chance each).
I'm sure I made it sound more complicated than it is...
